Strawberry Jello Cake

It should be only fitting that my first official post be of a recipe and of course a dessert.  With sooo many to choose from, I had a hard time picking just one favorite decadent treat.  That is when I realized that although fancy, time-consuming deserts are very tasting and ever so impressive…so are the simple yet classic desserts as well.  Some times simplicity is best.  Not only is this recipe simple and full of (semi)home-made goodness and love, but it can also be altered to be a low-fat recipe as well! 🙂  Here we go…

Strawberry Jello Cake

  • 1 box white cake mix
  • water, oil, egg whites (as directed on the box)
  • 1 big box strawberry jello (0r 2 30z boxes)
  • whipped cream
  • fresh cut up strawberries

Pre-heat your oven to 350 and grease a 9 x 13 cake pan.  Make cake as directed on the box and bake about 30-35 minutes or until the cake is done.

Cool completely. About one hour. Use toothpick to make small holes throughout the cake.  Does not have to be uniform in size or pattern, just all over the cake.

In a bowl, mix 1 cup boiling water with the strawberry jello for 2 minutes or until dissolved.  Then add 1 cup of ice water and mix well.

Pour the jello all over the cake.  Make sure all the holes get filled, all the sides and evenly distributed throughout.

Put cake in the fridge for at least an hour.  Even longer is better, but at least an hour should give the jello enough time to absorb in the cake. Mmmmm!

Now all you do is spread whipped topping all over the cake and then scatter the cut up strawberries all over the top! And there you go, an easy yummy treat! Perfect for a summer party or just a light filling dessert! YUMMY!!

So good and moist and fluffy!!  You can really do any kind of jello…blue raspberry, lime, lemon, any flavor you want.  However, at my house we have never made it past the strawberry!

This is my son’s absolute FAVORITE cake! He requests it with every birthday, sickness, reward… you name it, there is a reason to make some strawberry cake!  This was our “Hurricane Irene” cake.  Had to have a yummy down home classic family favorite on hand when we bunker down!  Now only did we stay safe, but we were very happy and full of STRAWBERRY JELLO CAKE!!
