Triple Chocolate Cake-Mix Cookies

Talk about yum Yum YUM!  These cookies are not only  moist and delicious but they require very few ingredients and are easy and quick to make.   I stumbled upon a basic recipe to make cookies from a box cake mix and have used this base many times for various types of cookies.   It’s great because normally I have the ingredients in the pantry already, so when I need to whip something up  for a sweet tooth emergency or for surprise guests, then I can have something delicious in minutes.  Plus, with my wild toddler running around… the quicker and less hassle recipes are a sure go-to!

Here is what’cha need:

• 1 box of cake mix (any flavor of your choosing) for this I chose the triple chocolate cake mix
• 2 eggs
• 1/2 cup oil
• 1 cup of whatever add ins you like! I chose to use white chocolate and semi sweet chips

Here is what’cha do:

• Pre-heat oven to 350′
• Combine all ingredients in a large bowl
• Bake for 10-12 minutes, 2 inches apart on ungreased cookie sheet.  1 minute after taking out of the oven, place on cooking rack

 These cookies were so moist and chewy… especially good right out of the oven!

I have made a few variations of these cookies, here are some combinations that I have tried in the past:

• Chocolate Chip = Yellow cake mix w/ chocolate chips
• Strawberry Cookies =  Strawberry Cake mix
• Snickerdoodles = White cake mix & before cooking roll each cookie into a sugar/cinnamon mixture
• Carrot Cake Cookies = Carrot cake mix & add in raisins & coconut
• Lemon Blueberry Cookies = Lemon cake mix with blueberries
• Chocolate Peanut Butter  =  Chocolate cake w/ Reese’s pieces

 You could use any cake mix you like and be creative with the add ins, or just bake the cake into cookies and they are still great! Let me know what kind of cookies you make!!!!
