I really wish that I could take the credit for these scrumptous cookies that I am sharing with you today. This recipe is actually Nicole’s from Heat Oven to 350 . I originally pinned these cookies on pinterest, and then brainstormed for an excuse to make them. Along came mother’s day and I was in cheesecake heaven. Is there a better way to show your mom that you love her than with cheesecake? And cookies at that?!?! I didn’t think so.
These cookies are super moist and chewy and really taste just like a bite of cherry cheesecake. The dough is made with cream cheese and them rolled in graham crackers. Just top it off with your choice of fruit filling and oh my-my… a perfect bite of cherry cheesecake every time. Genius!
This recipes makes a ton of cookies, I had enough to take to the in-laws for brunch, to my sister’s for dinner and we even kept a dozen at home for us… but were gone the next day. These goodies recieved rave reviews at each party, so I think I am going to have to make some to take to work too. I must share the cheesecake love.
