Amaretto Finger Cookies

Wow! I can’t belive it is almost the end of October and I this is my first post!  I have been pretty busy this month so even though I have been creating all sorts of goodies, I haven’t had the time to review my pictures and write up a post.  The days go by so quick!  I am all hyped up on Halloween candy so I thought it was a perfect time to catch you up on some of the Halloween goodies that I have been making lately… starting off with this recipe for some wickedly delicious Amaretto Finger Cookies.

Here’s What’cha Need:

  • 2 sticks unsalted butter
  • 1 cup powdered sugar
  • 2  & 3/4 cups of flour
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tsp. Amaretto
  • 1 tsp vanilla extract
  • sliced almonds
  • Red decorating gel

Here’s What’cha Do:

  • In a large bowl, cream together the butter and the sugar.  Add egg, vanilla and amaretto.
  • In another bowl mix together flour, salt and baking powder.  Add to wet mixture slowly. Combine.
  • Cover with plastic wrap and refrigerate for at least 1 hour
  • Roll into balls (about 1 to 1 1/2 inches) and then roll into a finger shape (about 1/2 in x 3 in).  Make them as thick, thin, long as you want.
  • Place on cookie sheet, 2 inches apart.  Use butter knife to make line indents for knuckles and also press tip downat end to create a nail bed)
  • Bake at 325 degrees for about 20 minutes.  Cool on pan for 2 minutes and then transfer to cooling rack.
  • Adda dab of red decorating gel to nail bed, then place a sliced almond on top for the nail.

 And THAT is finger lickin’ good!  hehe!   Until next time, friends!
