Banana Pound Cake

We are very picky banana eaters at my house.  We prefer the light green ones that are still pretty hard, so once they start getting brown spots and mushy, then they are out.   Yuck, don’t like ’em, they taste too banana-y… if that makes any sense.  Usually bananas in our house don’t make it to that point, cause we eat them like crazy…but occasionally we will have banana overload and have some over ripe ones to get rid of.   Usually my go to recipe to get rid of them is banana bread, but on the day I made this I wanted something different, something sweeter.  I decided to go for a banana pound cake, and I was bananas about the result.  OK, that was corny, sorry.  How about, I went ape shit for this cake? Get it bananas, apes?  Nah ok, not any better.  Whatev- here is how you make the cake 🙂

Here’s What’cha Need:

  • 1 box yellow cake mix
  • 1 box of banana pudding
  • 3 eggs
  • 1 cup water
  • 1/3 c oil
  • 2-4 mashed over ripe bananas

Here’s What’cha Do:

  • Preheat over to 350, grease and flour bundt pan
  • In large bowl, mix all ingredients together.  Mix well on medium for about 2 minutes
  • Pour into bundt pan and bake for about 1 hour or until toothpick comes out clean

And there you have it!  A nice sweet banana treat.  I didn’t frost this because we ate it as a breakfast bread, but you could if you need some extra sweetness!  Now, is it just me or has “Holla Back Girl” been playing in the back of your head too?  This shihhh is bananas! B. A. N. A. N. A. S!!
