
We went to our first fall bonfire of the season this past weekend at our neighbor’s house. It was the perfect fall night complete with a tractor hay ride, hot dogs and s’mores cooked over the fire, hot apple cider and of course good friends enjoying each other’s company while the kids run crazy. I have been following a low carb/ dirty keto woe for almost two months now – my goal is to try to reduce the amount of sugar and processed foods my family eats. Old habits die hard, but we have already made some significant changes. The key is being prepared!! And that is what I did here by making these adorable Ghost Meringue Cookies which are sugar free and low carb so I could take them to the party.
Here is what you need:
- 4 egg white (room temp)
- 6 tbsp powdered Swerve
- 1/4 tsp cream of tarter
- 1/2 tsp vanilla
- pinch of pink salt
- Lilly’s sugar free dark chocolate chips for mouth (optional)
- candy eyes (optional)

Here is what you do:
- Preheat oven to 250 degrees F & line baking sheets with parchment paper
- Beat egg whites with mixer at low speed until bubbles appear. Add cream of tarter & salt and increase mixer speed to medium high.
- Beat until soft peaks form and add in sweetener – one tbsp at a time.
- Add vanilla extract and beat with mixer until glossy and peaks are stiff
- Put mix into a piping bag and pipe ghost shapes onto baking sheet. Add candy eyes & chocolate chips for mouth
- Bake for 20 minutes. Reduce the oven temperature to 200 and cook for an additional 20 minutes. Turn off oven and let cookies sit in there for one hour. Take out of oven and cool at least an hour. Slowly peel off parchment paper and serve!

I really don’t even think anyone noticed that they were sugar free. They tore them up – the plate was clean in less than 5 minutes. I believe these come out to about 1 net carb per serving. The candy eyes are not strict keto – I think it is like 5 carbs for a tablespoon- which is a lot of little eyes – so I think you would be ok if you are doing dirty/lazy keto. But I am not the keto police.
